My wife and I really enjoyed one of those cheap fish pies we had bought from our local supermarket. We enjoyed it so much the Ann has decided she wants to make one of her own fish pies. The trouble is, that she has no idea how to make a butter sauce to go with the fish under the mashed potato covering which she is going pipe on. Ann has made plenty of Rous sauces but this sauce was different.

Recipes or help or ideas gratefully received :D

I just make a normal white sauce if I'm doing a fish pie - add a bit of fresh parsley, or a cheese sauce is nice if you have some smoked fish in the pie. White wine and / or fish stock will enrich the sauce.

Not sure about the butter sauce,though.........

There's a lemon and dill beurre blanc sauce which might do the trick :

.... to your basic white roux, add lemon juice (1tsp), i egg yolk and 2 oz butter over a gentle heat. stir gently until thickened.

..... or buy a packet of hollandaise sauce and make as per instructions.

I have not made a fish pie, however my father has and he makes a white wine sauce, or one pie he makes with fish has champagne in-i particualrly like that one as no one else likes champagne so i get to finish the bottle off......hic :)
