We had 4 boys who had to serve food to 48; two courses in the fastest possible time; we only had about 20 minutes for a meal. Flat plates (fully laden) were usually 6 at a time and woe betide anyone who spilt food on someone as they put a plate down. AFAIR deep plates were 4 or 5 at a time.

No aprons available.

how awful - what pressure that poor boy was under - and only 20mins for a meal - I'm surprised you are all still alive!
